Made from the grapes of two indigenous Trentino grape varieties: Teroldego and Schiava.

Production area

Campo Rotaliano, in the comuni of Mezzolombardo, San Michele all'Adige and the hills under vine around Rovere della Luna.

Vinification

The wine-making technique used is carbonic maceration: perfectly healthy, and mature grapes are laid out whole, uncrushed, in stainless steel vats, which are filled with carbon dioxide. After a few days the grapes are pressed and the must undergoes temperature controlled fermentation; after being separated from the skins, it is left for a short time to develop in stainless steel vats and is then ready for bottling.

Description

Ruby red in colour, bright and brilliant. Clean nose, distinctly fruity, with hints of raspberry and strawberry, typical of wines produced using carbonic maceration. Dry on the palate, pleasantly balanced, light in body but elegant and lively. This is a wine to be drunk young, available just one month after the end of the grape harvest.

Matching with food

Matches successfully with dishes having their own distinct flavour and traditional savoury dishes from Trentino such as Tortèi di patate (fried potato croquettes), to eat with cured meats and salamis, vegetable dips, and soft, strongly-flavoured cheeses.
