Cabernet Sauvignon
Originally from the south-west of France, in particular from the Bordeaux area of Gironde, Cabernet Sauvignon has been present in Trentino since the start of the 19th century, where it extended out especially in the hilly areas that best meet its agronomic requirements. In its native region, between the Garonne and Dordogne rivers, it contributes, together with other varieties, to the creation of some of the most famous wines of French tradition. The leaf is five-lobed with completely closed sinuses, leaving five holes inside the leaf itself. In autumn it turns a characteristic red.
The bunch is medium-sized, often sparse and with rather small berries, with a resistant, pruinose skin. Its pulp is fleshy, with a fruity and slightly herbaceous flavour. In Trentino, it stands out for its small production and small bunches, characteristics that limit its cultivation to the most suitable areas but which, at the same time, contribute to the obtaining of high-quality wines. Often vinified in a blend with Cabernet Franc and Merlot, it is one of the protagonists of the Rosso Trentino DOC, a local expression of the classic Bordeaux blend introduced in the 1960s.
