Bottega vinai
Cabernet Sauvignon
A grape variety originating from the Bordeaux area of Gironde, France, and introduced to Trentino at the beginning of the 19th century, it has spread especially in the hilly areas where it has found an ideal habitat for the production of high-quality wines. The rather limited unit production and small bunches have limited its diffusion to truly suitable areas. Often vinified in a blend with Cabernet Franc and Merlot, it is one of the protagonists of the Rosso Trentino DOC, a local expression of the classic Bordeaux blend introduced in the 1960s. Fermentation in stainless steel and subsequent ageing in wood, both French oak barriques and small Slavonian oak barrels, give intense aromas of wild berries, as well as toasted and spicy notes.
Grape varieties
100% Cabernet Sauvignon
Organoleptic characteristics
Very intense ruby red colour. It expresses itself on the nose with intense hints of berries, such as blackberry and blueberry, suitably integrated with toasted hints of vanilla and spicy cloves. On the palate it presents a welcome harmony, also thanks to the sweetness of the tannins which make the taste full, persistent and very balanced.
Pairings
Grilled meats, high-quality game, mature cheeses.
